These are two different jobs.

Since you are into engineering IAS would be tough to crack than IES.

IAS is more bigger and so more difficult.

IES can be cleared if you study well in your engineering.

This decision can be taken only by you. You have to first decide whether you are interested in an administration oriented job or a technical job. You need to understand the scope of each of the jobs. This is important as you will be able to perform in your job only then. The stream chosen should be whether you strengths lie.
