Can one become an ayurvedic doctor with an HSC in literature
But later follow a pre-ayurvedic certificate course
And then apply for a university in India to follow an ayurvedic course?

Sanskrit is not necessary to join as Ayurvedic Doctor in hospitals. BAMS is the basic qualification to join as Ayurvedic Doctor. HSC passed candidates having studied Physics, Chemistry, and Biology can undergo the course of BAMS. Sanskrit terms are usually used in ayurveda and can be studied as part of the course. Admission to BAMS is made through State/University level entrance exams.
