Hello,
Well (IITs) are autonomous public institutes of higher education,it is governed by the Institutes of Technology Act, 1961.
This act lists sixteen institutes out of which one is located in Jodhpur.
(Best without doubt) IIT is in itself an institute, in Jodhpur along with other branches at:
Delhi,Mumbai,Guwahati,Roorkee,Kanpur,Bhubaneswar, Chennai, , Gandhinagar, Hyderabad, Indore, Kharagpur, Mandi, , Patna, Ropar, and Varanasi.
All except older IITs (Kharagpur, Bombay, Madras, Kanpur, Delhi, Roorkee, Varanasi, Guwahati), are new.These are the very famous ones.
Also, post-graduate level program that awards M.Tech degree in engineering is administered by these older IITs.

IIT is the one of the finest college in India for b.tech and so, IIT jodhpur is the best institute for engineering in jodhpur . I suggest you also take admission in any IIT colleges

There are many coaching centers for IIT in Jodhpur, popular among those are listed below:

Akash Institute
Resonance coaching center,
Carrier point,

Deeksha Classes,
Saraswati classes for JEE,
and more.

Also to note, coaching centers are just guiders, if you pay interest in yourself studies you can still cover the entire syllabus before the exam and also can score good score versus all India rank. There are few books that you can refer for self study.

For Maths, ML Khanna, Arihant publisher books.
For Chemistry, NCERT books, P. Bhadur for Physical chemistry and Inorganic chemistry. OP Tondon for Organic chemistry.
For Physics, NCERT books for basics, HC verma and IE Irodov.
