What are the good courses to do after studying Polytechnic? Shall I pursue engineering courses or are there any other 1-2 years courses available having specialization in specific areas?

After completing Diploma in Polytechnic, you can select any branch of engineering depending upon your interest among CSE, Mechanical, electrical, Civil, Aerospace, Biotechnology, Food Technology, Biomedical Engineering, Information Technology, Chemical Engineering, Automobile Engineering, Electronics and Computer Engineering or any other.

Yes, of course! As said before, engineering is best option.
