Yes, there are lot of openings in embedded courses job. The only thing is that the job pays less at the beginning but after a few years of experience you can get a good package.
As it is hardware based job, you have kind of job security as it is very hard to find good hands-on based experienced candidate.
Alternatively there is always opening for teaching faculty job.
