Engineering graduate students are totally eligible to appear in Indian Forest Services.

You should optional subject according to your interest.

If you are most interested in Mathematics than choose Mathematics as optional otherwise you can choose any other subject according to your interest.

The minimum education required for appearing in the Indian Forest Services examination is a bachelor's degree with at least one of the subjects namely Animal Husbandry & Veterinary Science, Botany, Chemistry, Geology, Mathematics, Physics, Statistics and Zoology or a Bachelor's degree in Agriculture, Forestry or in Engineering from a recognized university.

So, as per the educational requirement for the same examination which is mentioned above, candidate pursuing degree in engineering in any discipline is eligible for appearing in the same examination and therefore you are also eligible for the same being a student of B.E. in Electrical and Electronics engineering.

As far as the selection of optional subject is concerned, it should be entirely dependent on your interest and strength as no subject is easier and almost every subject has the same selection rate and therefore in my advise you must opt for the subject according to your personal strength and interest as psychologically it will appear as the easiest subject for you as compared to others.

For complete information regarding the same examination, you can refer to the link www.upsc.gov.in.
