As you are prefering home study then you can do CCNA for that you can book like "Sybex CCNA Cisco Certified Network Associate Study Guide-Todd Lammle" and video lectures are available on internet to carry your study.

You can also go through language like MATLAB which will be very benificial for you as far as the future aspects has concern.

As you have one month time so best course in Mirocontroller it includes hardware description, pin description, tools to access microcontroller,
mirocontroller programming in assembly and embedded C.

For three month period there are various courses are available like embedded system, CCNA, in software courses are C, C++,Java, and many more courses are available.
If you specify your location then i can tell you the best institute regarding the coursess. But i adviced you to do your course from reputed institution and insure that it will be of your interest.

Best designation for electronics engineer is either design engineer, Research and Development, Network engineer.
Design engineer relates with embedded system engineer , VLSI.
R&D relates manufacturing, circuit design, and developing new ideas about existing product.
Network engineer relates with wireless and telecommunication.
