Sir, I am from Andhra Pradesh and I am a student of 12th Science. I will do Engineering after my Intermediate. I belong to an SC category but I don't have a certificate. I will apply for all entrance exams as an SC candidate?

YES, you can apply for all entrance exams as an SC candidate if you don't have certificate.
But, you can apply under general category and you will not get any benefits that a SC candidate get.
There will be no age relaxation for you in upper age limit.

Personally, I would like to suggest you that you should apply for SC category certificates.
