How should an eleventh grader prepare for AIIMS entrance apart from attending coaching institutions and Studying NCERT?

Yes, you can prepare of your own to qualify in the AIIMS examination conducted by the AIIMS for the admission in the different medical courses. But there is a need of good guidelines with your senior or the teacher for the preparation of examination.

The AIIMS examination is not an easy examination. The candidates need to work hard to qualify in the examination mainly on the Biology as there are about 90 question from it. Still it is essential to have the better knowledge of the physics and the chemistry and the general knowledge.
