The IAS eligibility criteria is that you need to be a graduate in any discipline.

So it really does not matters which subject you choose to complete your graduation.

But make it a point to maintain 55-60% marks at graduation level. If you fail to meet this criteria then they won't allow you to sit for the exam.

Firstly, you will have to do Graduation in any field if you want to go for IAS or Civil services. Then after scoring above 60% in your graduation field you can apply for the IAS.
