Hello,

Food science and technology is a quite new subject. So reference books are available fewer in number and they are a bit expensive. Most of them are foreign publications. List of books for reference are-

1.Handbook of Food Science, Technology and Engineering
By Yiu H. Hui, CRC Press 2006

2. Encyclopaedia of Food Science and Technology
By You H. Hui

3. Objective on Food Science and Technology
By D Mudgil

4.Food Science and Technology
By George F. Stewart, Maynard A. Amerine,
Bernard S Schweigert and John Hawthorn

5. Food Science and Technology
By Geoffrey Campbell Platt

Some of these books are available online. You can check them out.
