You can consult GK publications for GATE. These are the most preferred ones for GATE preparation.

Yes you can choose these subjects in Mains as there is no subject in prelims from 2011.

for ias prelim there is need to select optional subjects from 2011 but you need to have select any two subjects for the main exam from the choice given.

yes,. You can. But both are considered to be bit tough subjects. Also both are problematic.
Better would be to take maths or physics and any other theoretical subjects like sociology, public administration etc.

If you are really good in these subjects, You can take them both even. No risk. But you should be proficient enough.
